On Tuesday, November 4th, 2025, Gvino Wine Bar will host a rare and intimate Champagne Dinner in collaboration with the iconic Champagne Billecart-Salmon, one of the most esteemed houses in France. To guide us through the evening, we are honored to welcome Pierre Chichportiche, Billecart-Salmon’s U.S. Brand Ambassador, who will be joining us to share the rich history, craftsmanship, and vision behind each bottle.
This exclusive dinner features a multi-course menu thoughtfully designed by our culinary team to harmonize with five distinguished champagnes. Each dish highlights seasonal ingredients and delicate technique, intended to elevate every sip and savor.

Champagne Charles Le Bel “Inspiration 1818” Brut NV
We’ll begin the evening with a refreshing glass of Inspiration 1818 — a lively, expressive brut from Billecart-Salmon’s sister label, designed to set the tone with its crisp, toasty charm.
First Course
Chesapeake Bay Oysters
Paired with: Billecart-Salmon, Champagne Grand Cru “Le Blanc de Blancs”
The pure, saline elegance of fresh oysters meets the mineral precision of this 100% Chardonnay cuvée. A match made in coastal heaven, the Le Blanc de Blancs delivers tension, finesse, and vibrant citrus notes that dance beautifully with the oysters’ natural brine.
Second Course
Squid Ink Linguine with Clams
Paired with: Billecart-Salmon, Champagne Grand Cru “Le Réserve”
The richness of the ocean meets the depth and complexity of Le Réserve — a multi-vintage blend showcasing Pinot Noir, Pinot Meunier, and Chardonnay. Its generous texture and layered palate provide a brilliant counterpoint to the umami notes of the squid ink and the delicacy of the clams.
Main Course
Salmon Marinated with Mediterranean Herbs, Roasted in Oven, Served with Assorted Baby Carrots

A signature dish paired with a signature wine. The herb-marinated salmon, tender and aromatic, finds its soulmate in Billecart’s beloved Le Rosé — a graceful yet vibrant champagne known for its wild strawberry notes, creamy mousse, and precise structure. A highlight of the evening.

Millefoglie with Fresh Berries
Paired with: Billecart-Salmon, Champagne “Le Sous Bois”
Our grand finale: flaky, delicate layers of millefoglie filled with cream and topped with macerated berries, served alongside Le Sous Bois — a rare, oak-aged champagne with exceptional richness, spice, and structure. It’s a bold and luxurious finish that brings the evening full circle.
