Description
The Chante-Perdrix domaine was established by Etienne Pécoul in 1896. After Henri Nicolet , it is Guy and Frédéric Nicolet (third and fourth generations ) who presently exploit the 18 hectares surrounding the property. Taking one year with another, the production is 550 hectoliters of red and 40 hectoliters of white.
The vines , average age of 45yrs are located in the southern quarter of the appellation zone , planted on shingles from the Rhone river. A large percentage of Grenache (about 80%) vinified with syrah , mourvèdre and muscardin for the main ones produce rich wines , fortified (around 14° of alchohol) and with intense ruby color.
After an entirely manual harvest and a strict sorting , the grapes are put in cement tanks to undergo traditional vinification during 15 days. Once the process of vinification is achieved and the wine is finished , it is transferred into oak stock vats for a period of one and half to two years.
