Grapes are hand selected, then destemmed and cold macerated for 5-6 days. Alcoholic fermentation at 26-29 degrees C with daily pump overs. Post-fermentive maceration for 2-3 weeks. Wine is smoothly clarified and cold stabilized when needed. Aged in French oak barrels for 14-16 months.
